Food Processing: The FDA Good Manufacturing Practices (GMPs)

Food safety in food processing facilities can be a direct result of following the FDA specified GMPs. Subpart B of the current GMP requires a sanitary water supply and process water which protects not only the food product but also the facility equipment and employees. Closed loops, humidifiers and cooling towers have the potential of spreading Legionella as well as corrosion and energy loss due to biofilm. Potable water without adequate residual chlorine is also susceptible to dangerous levels of bacteria.
